Multekrem (Cloudberries and Cream)
Description
Ever since I discovered SSA Scandinavian Fruits I've wanted to try making Multekrem, which is Norwegian for cloudberries and cream (basically). The problem was that most Multekrem recipes call for double cream (unless it's a NA recipe in which case it uses heavy cream or a ton of whipped cream). I don't know of any flavor house that makes a double cream. Aside from the few bad Devon creams, HS Cream is the thickest one I can think of but that artificial butter note is not my thing 🤮. So, I had to kind of Frankenstein my own.
SSA Scandinavian Fruits is of course a given but it can get candied and overpowering if pushed too high. I went with 2.25% after a few tests. This allows the creams to blend in and feel thick without SF becoming candied or the creams just drowning it out. I knew I wanted FLV Cream but I'd have to build on it since it doesn't really work very well over about 1.5%. I went 1.25 to get all I could out of it then I added FA Cheesecake Olympic to it at 0.75%. CO never tasted much like cheesecake to me and more like a slightly tangy heavy cream. Paired with FLV Cream it works well as heavy cream.
Heavy cream wasn't enough though so I decided to give SSA Ice Cream a try. It's just at 1% to try and keep the whole thing from tasting like Cloudberry Ice Cream. This really thickened up the cream part.
I also added just a touch of INW Shisha Raspberry to try and help make SSA Scandinavian Fruits taste a bit more authentic....at least that was the idea.
Finally I added 1.5% WF Whipped Cream (Fresh) to sweeten everything up a bit and top off the ton of cream going on in this recipe (Comparatively speaking).
I was pleasantly surprised by the outcome. It's not 100% authentic to real Multekrem but it's close and still damn good imo.
I wouldn't recommend any sweetener really. With Scandinavian Fruits at 2.25% just about any sweetener will push it over that candied edge. But as always you do you. 😃
*Edit Note - I tried upping FA Cheesecake Olympic from 0.5% to 0.75% and I think it makes the double cream aspect taste even better. It doesn't come across as cheesecake at all just a better double cream.*
