Description

The lemon cream wafer gives the shortbread a nice creamy lemon flavor, not overpowering lemon pledge flavor. The clotted cream makes this rich and the sugar cookie gives this body and fills the recipe out. I’ve actually eaten these in Ireland for a non traditional European breakfast. Laugh if you will, but the McDonald’s down the street from our hotel served these. They also sell scones and jam. I put the recipe together as I thought it would be made in real life. I put this on ELR and someone commented this 5 stars ADV material for me; this is my type of recipe. Light, creamy, buttery and definitely not heavy or greasy. Slightest kiss of the lemon cookie. I am a new lover of SSA Clotted Cream after trying and steeping this recipe. Great job !! So I hope you try this and enjoy it.
