Peach Me How to Dougie (Peach Cobbler)
Description
Admittedly complicated recipe with a lot of parts, but after 11 versions, I think I got it just right.
The mix of frosted donut/yellow cake/cake batter gives a pretty authentic doughy taste, while the pie crust and joy come in to recreate the cooked tops of the dough. And even at 4.25%, I'm not personally getting the Play-doh taste from the donut that a lot of people complain about-- anything lower though, and I found the flavor was taken over by the peaches entirely. I'm honestly not sure how much the cake batter adds to things, tbh, but the intent was to give the dough a little more of the heavy, greasy flavor of cobbler dough.
The combination of peaches gives a more authentic peach taste than any one of them singularly, while the mangos and apricots give juiciness and mouth feel. The lemon sicily is the final component which just "brightens" the fruit mixture up a little bit just like adding lemon juice in real life would.
As for spices, the CDS and rich cinnamon compliment each other well, I was putting more of each and it was too overwhelmingly strong, natural cinnamon or cinnamon sugar. The brown sugar and butter help create the flavor of the glaze.
And then finally, the sweet cream tops the whole thing off, adding a little more buttery flavor but balancing out and combining the ingredients as a whole. You could probably increase this just a bit depending on your preference. Recipe
